I think a wonderful goal to have is to make each year better and better- and generally that is what I strive for This food blog has been an exciting part of my year- only a couple months now that it’s been up, but I’ve really enjoyed sharing recipes and pictures with you. So I made a pizza recipe. It looks pizza-y. But in complete honesty, it doesn’t taste completely pizza-y to me. But I’m still going to share the recipe, maybe you’ll be inspired and make something more authentic-tasting than I did. Plus- one huge serving only has about 300 calories, 34 grams of protein and 16 gram of carbs- not bad for pizza-ish!
Don’t get me wrong- it still tastes really good. Lots of tomato flavour and cheesy goodness. I also loved the olives, and found it tasted better the next day. But I just want to warn you, its pizza-themed and not quite pizza.
I made a couple different thicknesses of the cauli bread- and felt the thinner version had a more authentic taste. So you might want to stick with that. Also, the variations are pretty endless- as I’m sure you know- pepperoni, hawaiian, chicken etc.. whatever you fancy is all good.
Cauli Pizza
Ingredients:
1 kg cauliflower, riced (see here for details)
30 g dried parmesan cheese
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp baking powder
2 cups egg whites
1 cup cheese, finely grated (112 grams)
for sauce:
1/2 cup tomato sauce (made from just tomatoes- no sugar)
1/2 tsp stevia granular (optional)
1 tsp oregano
1 tsp basil
1/2 tsp garlic powder
1/2 tsp onion powder
toppings:
1/2 cup cheese, finely grated
16 olives, sliced thinly
Method:
Preheat oven to 350
1. Combine seasonings and baking powder with parmesan and add to riced cauliflower. Stir well.
2. Add egg whites and mix.
3. Add cheese and mix.
4. Pour into parchment lined baking trays and bake 15-20 minutes until golden. Alternatively, you can cook in a frying pan, but I had better results in the oven.
5. Prepare sauce by combining ingredients. When bread is done, assemble pizza by topping with sauce and desired toppings. Broil until cheese is melted.
Serves 4 (big portions)
